With its local botanicals, true blue Australian characters burst from this refreshing native ale. It’s like a relaxed afternoon out on the lawn with the sprinklers going and the cicadas chirping. Pouring pale straw into the glass and topped with a snowy white head, herbal notes and aromas of Australian lemon myrtle drift up like a country breeze. Flavours of sweet malt and lemon myrtle follow and are rounded out with a dry finish, thanks to the green tea.

Ingredients

1 x 1.3kg Mr Beer Golden Ale
1 x 250g Mr Beer Unhopped Malt Extract - Pale
10 x Madura Green & Australian Lemon Myrtle Tea Bags
1 x 15g Coopers American Ale Yeast
1 x 72g Mr Beer Carbonation Drops

1. Mix

Clean and sanitise all equipment that will come in contact with the brew.
Add the contents of the Mr Beer Golden Ale and the Mr Beer Unhopped Malt Extract - Pale to the
Fermenting Vessel (FV).
Add 2 litres of hot water and stir with a sanitised spoon to dissolve the contents.
Fill the FV with hot or cold water to the 10 litre mark trying to get it as close to 17- 23C.
Sprinkle the Coopers American Ale Yeast and fit the lid.

2. Brew

Place the FV in a location out of direct sunlight and try to ferment between 18C - 24C.
At about day 5 or once the foam has died down, remove the cardboard from the Tea Bags and add the
Tea Bags to your beer, and let them steep.
On day 7 check the specific gravity (SG).
Check the SG again the following day and so on.

3. Bottle

The brew is ready once the SG has stabilised over a couple of days, expect about 1012-1014.
Gently fill clean PET bottles to about 3cm from the top.
Add 2 carbonation drops per bottle and secure the caps.
Store the bottles upright in a location out of direct sunlight at or above 18°C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the PET bottles.
Bottles kept unrefrigerated should improve with age.
When ready to drink, chill the bottles upright.
The chilled beer may be poured into clean glassware, leaving the sediment behind.
Expect the alcohol content to be approximately 5.3% ABV.
