A brew best enjoyed in red Speedos. Love them or hate them, you can’t deny the beauty of the Baywatch crew; something we attribute to the fact that this fine brew was their knock-off of choice. Inspired by a well-known Hefeweizen, this Mit Hefe style brew (meaning with yeast) is the perfect pale gold partner for a relaxed afternoon after running along the beach in slow-motion. With aromas of clove, spice and a hint of banana, matched with a spritzy, yet soft malt palate and a suggestion of lemon that leaves a clean finish… it’s safe to say, The Hoff will have you surfing a wave of satisfaction into the sunset; and unlike the Hoff himself, this brew will improve with age. Ingredients

4 x 250g Mr Beer Unhopped Malt Extract - Golden
1 x 25g Perle Hops
1 x 11g Lallemand Munich Dry Yeast
1 x 72g Mr Beer Carbonation Drops

Mix

Clean and sanitise all equipment that will come in contact with the brew.
In a 2 litre pan, mix one of the Mr Beer Unhopped Malt Extract - Golden with 1 litre of water and
bring to the boil.
Add Perle Hops and boil for 20mins.
Remove from heat and cool the pan in a sink of iced water.
Strain the cooled malt/hop mix into the Fermenting Vessel (FV).
Add the 3 remaining pouches of Mr Beer Unhopped Malt Extract - Golden to the FV.
Fill the FV with cold water to the 8.5 litre mark.
Sprinkle the Munich Dry Yeast and fit the lid.

1. Mix

2. Brew

Place the FV in a location out of direct sunlight and try to ferment between 20C-24C.
Fermentation should take 7 to 14 days.
On day 7 check the specific gravity (SG).
Check the SG again the following day and so on.

3. Bottle

The brew is ready once the SG has stabilised over a couple of days, expect about 1006 to 1010.
Gently fill clean PET bottles to about 3cm from - the top.
Add 2 carbonation drops per bottle and secure the caps.
Store the bottles upright in a location out of direct sunlight at or above 18C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the bottles.
Bottles kept unrefrigerated should improve with age.
When ready to drink, chill the bottles.
This beer style is “Mit Hefe” (meaning with yeast) and may be agitated gently to suspend yeast
sediment prior to pouring into a tall, open mouthed glass.
Expect the alcohol content to be approximately 4.5% ABV.
