Audacious aromas of ripe melon, stonefruit, and a hint of cheeky lime, groove on with soft herbal and tropical notes from the EXP 09326 and Cashmere hops. The flavours are a bold yet balanced choice, with a smack of firm bitterness up front, softened by clean malt, and a finish that’s drier than your wit after a long day at the races. Ingredients

1 x 1.7kg Coopers Australian Pale Ale
1 x 1kg Coopers Brew Enhancer 2
1 x 500g Coopers Light Dry Malt
1 x 100g Light Crystal Malt
1 x 100g Roasted Barley
2 x 25g Galaxy Hops
1 x 11.5g Safale US-05 Dry Yeast
1 x 250g Coopers Carbonation Drops

Mix

Clean and sanitise all equipment that will come in contact with the brew.
Add the contents of the Mr Beer Northwest Pale Ale, and the Coopers Light Malt Extract – Pale to the
Fermenting Vessel (FV).
Add 2 litres of hot water and stir with a sanitised spoon to dissolve the contents.
Fill the FV with hot or cold water to the 10 litre mark trying to get it as close to 17- 23C.
Sprinkle the Yeast from the can and fit the lid.

1. Mix

2. Brew

Place the FV in a location out of direct sunlight and try to ferment between 18C - 24C.
On Day 5 or once the foam has died down, add the EXP 09326 and Cashmere Hops (we recommend
wrapping them in a mesh cleaning cloth, pulled straight from the wrapper).
At about day 7 check the specific gravity (SG).
Check the SG again the following day and so on.

3. Bottle

The brew is ready once the SG has stabilised over a couple of days, expect about 1010 to 1015.
Gently fill clean PET bottles to about 3cm from the top.
Add 2 carbonation drops per bottle and secure the caps.
Store the bottles upright in a location out of direct sunlight at or above 18C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the bottles.
Bottles kept unrefrigerated should improve with age.
When ready to drink, chill the bottles upright.
The chilled beer may be poured into clean glassware, leaving the sediment behind.
Expect the alcohol content to be approximately 5.8% ABV.
