At last. Time to chill. Time to re-centre. Time to find balance – and by that, we mean the unique balance between IPA and green tea. Cascading deep gold like a shimmering waterfall, it comes to rest beneath a mossy white head. Aromas of grape, berry and citrus drift up as if carried on a rainforest breeze. Then take a sip and allow your tastebuds to be embraced by floral and citrus flavours, and a soul-enhancing crispness – all thanks to the green tea. And finally, be refreshed by a clean, dry finish and a sense of tranquillity. Ahhh… bliss.

Ingredients

1 x 1.3kg Mr Beer North West Pale Ale -
1 x 250g Mr Beer Unhopped Malt Extract - Pale
1 x 25g Enigma Hops
15 x Madura Green Tea Bags
1 x 15g Coopers American Ale Yeast
1 x 72g Mr Beer Carbonation Drops

1. Mix

Clean and sanitise all equipment that will come in contact with the brew.
Bring 1 litre of water to 70°C and add 10x Madura Green Tea Bags and steep for 5 minutes
Add the contents of the Mr Beer North West Pale Ale and the Mr Beer Unhopped Malt Extract - Pale to
the Fermenting Vessel (FV).
Strain the green tea infusion into the FV and stir with a sanitised spoon to dissolve the contents.
Fill the FV with hot or cold water to the 8.5 litre mark trying to get it as close to 17- 23C.
Sprinkle the Coopers American Ale Yeast and fit the lid.

2. Brew

Place the FV in a location out of direct sunlight and try to ferment between 18C - 24C.
At about day 5 or once the foam has died down, add the Enigma Hops (we recommend wrapping in a
mesh cleaning cloth, pulled straight from the wrapper).
Remove the cardboard from the remaining 5x Tea Bags and add the Tea Bags to your beer and let
them steep.
On day 7 check the specific gravity (SG).
Check the SG again the following day and so on.

3. Bottle

The brew is ready once the SG has stabilised over a couple of days, expect about 1010-1014.
Gently fill clean PET bottles to about 3cm from the top.
Add 2 carbonation drops per bottle and secure the caps.
Store the bottles upright in a location out of direct sunlight at or above 18°C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the PET bottles.
Bottles kept unrefrigerated should improve with age.
When ready to drink, chill the bottles upright.
The chilled beer may be poured into clean glassware, leaving the sediment behind.
Expect the alcohol content to be approximately 6.2% ABV.
