Our Wort Hog Ale (see what we did there) is anything but ‘boar-ing’ (yep we went there). And while it might sound like a bit of a ‘brewt’ (yeah, ok we’ll stop now), this refreshing American Pale Ale is all style. Pouring a rich amber into the glass and rounded out by a nice white head, dominant aromas of citrus play on the snout, followed closely by refreshing hints of pine. The citrus continues on the palate, with a malty sweet finish to tame the charging bitterness.

Ingredients

1 x 1.3kg Mr Beer North West Pale Ale
1 x 250g Mr Beer Unhopped Malt Extract - Pale
1 x 100g Light Crystal Malt
1 x 25g Amarillo Hops
1 x 25g Centennial Hops
1 x 11.5g Safale US-05 Dry Yeast
1 x 72g Mr Beer Carbonation Drops

Mix

Brew Day: Crack the Light Crystal Malt, by putting the Light Crystal Malt in a plastic zip-lock sandwich
bag and crack them with a rolling pin. In a pot, add the cracked Light Crystal Malt, add 700ml of just
boiled water with 300ml of tap water and then steep for 30 mins. Strain the Light Crystal Malt, then
bring the liquid to the boil. Boil for 5 minutes.
Set the pot in a cold/ice water bath to cool then pour into the Fermenting Vessel (FV).
Add the contents of the Mr Beer North West Pale Ale and the Unhopped Malt Extract – Pale to the FV.
Fill the FV with cold water to the 9 litre mark.
Sprinkle the US-05 yeast and brew can yeast then fit the lid.

2. Brew

Place the FV in a location out of direct sunlight and try to ferment between 18C - 22C.
At about day 5 or once the foam has died down (whichever comes first), add the Amarillo and
Centennial Hops - we recommend wrapping them in a mesh cleaning cloth, pulled straight from the
wrapper.
After another 4 days check the specific gravity (SG).
Check the SG again the following day and so on.

3. Bottle

The brew is ready once the SG has stabilised over a couple of days, expect about 1011 to 1015.
Gently fill clean PET bottles to about 3cm from the top.
Add 2 carbonation drops per bottle and secure the caps
Store the bottles upright in a location out of direct sunlight at or above 18C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the bottles.
Bottles kept unrefrigerated should improve with age.
When ready to drink, chill the bottles upright.
The chilled beer may be poured into clean glassware, leaving the sediment behind.
Expect the alcohol content to be approximately 5.7% ABV.
