Honey has been an ingredient of many great beers through history. Honey is highly fermentable and contributes subtly to the flavour of the brew. We suggest Strawberry Clover Honey for this recipe but any light flavoured honey may be used.

Strawberry Blonde

Flavour Profile Fruity, Sweet
Alcohol Content 4.6%
Colour (EBC) 6
Bitterness (IBU) 25
Volume 23L
Difficulty Easy

Ingredients

1 x 1.7kg Coopers Canadian Blonde
1 x 1kg Coopers Brew Enhancer 1
1 x 325g Strawberry Clover Honey (or light flavoured honey of your choice)
1 x 250g Coopers Carbonation Drops

1. Mix

In your sanitised fermenting vessel, dissolve Coopers Canadian Blonde, Brew Enhancer 1 and Honey in
3 litres of hot water.
Fill fermenting vessel with cool water to the 23 litre mark and stir thoroughly.
Sprinkle Canadian Blonde yeast over the surface and fit the lid

2. Brew

Ferment temperature should be in the range 21C-27C.
Fermentation has finished once the specific gravity is stable over 2 days, it should be around 1010.

3. Bottle

Gently fill clean PET bottles to about 3cm from the top.
Add 2 carbonation drops per bottle and secure the caps (use only one carbonation drop for bottles
intended to be stored for a longer period).
Store the bottles upright in a location out of direct sunlight at or above 18C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the PET bottles.
Take advantage of the fresh hop character and drink this beer early.
When ready to drink, chill the bottles upright.
The chilled beer may be poured into clean glassware, leaving the sediment behind.
Expect the alcohol content to be approximately 4.6% ABV.
