Let your tastebuds float up to a desert island on this tropics-inspired golden ale. There’s nothing fishy about this drop as it pours pale gold into the glass under a puffy white head. Banana and clove aromas hook you in, before hints of pineapple and coconut start swimming around your mouth. A refreshing, medium-bodied beer that’s not at all sharp, thanks to its low-bitter finish.

Ingredients

1 x 1.3kg Mr Beer Golden Ale
1 x 250g Mr Beer Unhopped Malt Extract - Pale
1 x 215g Shredded Coconut
1 x 11.5g Safbrew WB-06 Dry Yeast
1 x 72g Mr Beer Carbonation Drops

1. Mix

Clean and sanitise all equipment that will come in contact with the brew.
Add the contents of the Mr Beer Golden Ale and the Mr Beer Unhopped Malt Extract - Pale to the
Fermenting Vessel (FV).
Add 2 litres of hot water and stir with a sanitised spoon to dissolve the contents .
Fill the FV with hot or cold water to the 10 litre mark trying to get it as close to 18° - 24°C.
Sprinkle the Safbrew WB-06 yeast and fit the lid.

2. Brew

Place the FV in a location out of direct sunlight and try to ferment between 18C - 24C.
At about day 5 or once the foam has died down (whichever comes first) lightly toast the coconut in a
pan over a low heat until it is golden (be careful not to burn it).
Add the toasted coconut (we recommend wrapping in a mesh cleaning cloth, pulled straight from the
wrapper) into the FV.
On day 7 check the specific gravity (SG).
Check the SG again the following day and so on.

3. Bottle

The brew is ready once the SG has stabilised over a couple of days, expect about 1012-1014.
Gently fill clean PET bottles to about 3cm from the top.
Add 2 carbonation drops per bottle and secure the caps.
Store the bottles upright in a location out of direct sunlight at or above 18°C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the PET bottles.
Bottles kept unrefrigerated should improve with age.
When ready to drink, chill the bottles upright.
The chilled beer may be poured into clean glassware, leaving the sediment behind.
Expect the alcohol content to be approximately 5.3% ABV.
