Spring has sprung with this bloomin’ brilliant pale gold lager. It lands bright, clear and fresh as a daisy beneath a tight white head. Take a big deep breath and you’re presented with a bouquet of subtle citrus-lime and floral notes from late Motueka hop additions. The flavour is crisp and dry like a sunny October morning. A light malt backbone keeps things cheery, and a gentle bitterness allows the Motueka’s lime zest and herbal character to blossom. But they never overshadow the classic lager profile. It finishes clean as a whistle and perfectly balanced, delivering a refreshing, easy-drinking beer that’s no shrinking violet – blending traditional lager smoothness with a modern hop twist.

Ingredients

1 x 1.7kg Coopers Lager Extract (note recipe only requires 500g)
1 x 1.5kg Thomas Coopers Light Malt Extract (note recipe only requires 420g)
1 x 1kg Dextrose (note recipe only requires 250g)
1 x 25g Motueka Hops
1 x 15g Coopers German Lager Yeast
1 x 72g Mr Beer Carbonation Drops

Mix

In a good size pot (approx. 3 litres) dissolve 250g of Coopers Lager Malt extract in 2 litres of water.
Add pot to the stove and bring to the boil. Add Motueka hops and gently boil for 5 minutes (we
recommend wrapping them in a mesh cleaning cloth, pulled straight from the wrapper).
Remove pot from heat and set in an ice bath to cool for 15 minutes.
Strain the wort into your Fermenting Vessel (FV) and add 250g remaining Coopers Lager Extract, 420g
Light Malt Extract and 250g Dextrose, stir to dissolve.
Fill the FV with cold water to the 5 litre mark.
Check the temperature and top up to the 10 litre mark with hot or cold water to get as close to 15°C
as possible.
Sprinkle the Coopers German Lager Yeast and fit the lid.

2. Brew

Place the FV in a location out of direct sunlight and try to ferment between 12C-15C. Don’t be too
concerned if it goes a little warmer.
Fermentation should take 7 to 10 days.
Once fermentation slows down, approximately day 5, Check Specific Gravity (SG).
Check the SG again the following day and so on.

3. Bottle

The brew is ready once the SG has stabilised over a couple of days, expect about 1005 to 1010.
Gently fill clean PET bottles to about 3cm from the top.
Add 2 carbonation drops per bottle and secure the caps.
Store the bottles upright in a location out of direct sunlight at or above 18C.

4. Enjoy

After at least two weeks, check for sufficient carbonation by squeezing the bottles.
Bottles kept unrefrigerated should improve with age.
When ready to drink, chill the bottles upright.
The chilled beer may be poured into clean glassware, leaving the sediment behind.
Expect the alcohol content to be approximately 4.5% ABV.
